Mint Choc Chip Coconut Cookie Dough (vegan | gluten-free)

Coconut flour this, coconut flour that, literally I’m sick at the sound of this bloody coconut flour…that’s why I thought I’d use it. Well everyone’s hyping it up! I’ve got to see what all the fuss is about.


Wanted to start with something piss easy so cookie dough naturally came to mind. Also, it’s almost impossible to make it taste like shit so can’t really go wrong. Though maybe for that reason this is an unfair first trial for coconut flour since it’s unlikely to taste bad. Meh, I’m sure I’ll use it again. CBA to step up to a next level recipe, another time.

A few hours and a large cookie dough lump later….


So what I’ve concluded is that if you’re not an uber coconut fan like me, probably not the greatest of options.  Well of course I expected a coconut flavour and fragrance (duh), but I didn’t think it would be so overpowering. Anyway, smell and taste aside, the texture was palatable, but kind of dry. However, it managed to be oily at the same time. Strange stuff.

I think it would be more suited to a baked good or possibly combined with another type of flour to optimise the texture and dampen the coconut smell exuding the final product.

All the same, here’s the recipe- maybe you can make a better version.

Serving size:


  • 130g coconut flour
  • 60ml maple syrup
  • 1 tsp vanilla extract
  • 30g coconut palm sugar
  • 3 tbsp olive oil
  • 50g chocolate chips
  • 1 tsp peppermint extract


  1. Combine all ingredients together in a bowl except chocolate chips and mix until a smooth dough is achieved.
  2. Fold in the chocolate chips until evenly distributed.

Turn into balls or simply leave as the big lump you’ve created and eat away to your heart’s content. Be warned, the fat level is pretty high so don’t go crazy- but it’s your choice, free will and all that.
