Now this is one dish I truly miss since cutting out meat, coronation chicken. However, what I did realise was that it was the delectable mayonnaise infused with sweet Indian spices and bits of juicy mango and sultanas working in tandem with one another that were responsible for bringing this filling to life and making it what it is.
So I just replicated the creamy dressing with my own homemade tofu mayonnaise and drenched a can of chickpeas in it and it was the best sandwich I’ve had since being vegan, seriously. Super easy, so just make it and eat it, job done.
- 1 can chickpeas drained
- 3 tbsp mayonnaise
- 1 mango diced
- 2 tbsp sultanas
- 1 tsp curry powder
- 2 handfuls spinach
- Bread to serve
- Fold all ingredients (except spinach) together until well mixed.
- Spoon between 2 slices of bread or as a toast topper with the spinach and serve.
Coronation chicken cravings can finally be satisfied again, without any harm to the chicken!
