The mere mention of this light and dreamy dessert, elicits excitement through the entire core of my body. Combine it then with the humble yet tasty sweet potato to create and herein lies the creation of the sweet potato souffle.
Albeit, this sweet potato souffle version is a tad more dense than its conventional contender, but this dessert fits into a category of its own.
So, ready for your foodgasm? Here’s the recipe…
Makes 4 puddings
- 200g sweet potato mash
- 200g coconut cream
- 200 ml whipped aquafaba
- 1tsp vanilla extract
- ½ tsp cinnamon
- 3 tbsp coconut sugar
- Fold all ingredients together.
- Pour into ramekins and bake for 20 minutes.
- Allow to cool for a few minutes before serving.
Take a spoon, sit back and get ready for an epic mouthful.
