1-Step Almond Cheese

This 1-Step Almond Cheese doesn’t need to be soaked overnight as with other nut cheeses and requires just 4 ingredients to be made. It’s creamy, delicate and versatile and super easy for anyone and everyone to make. The only step required is mixing!

Serving size:

Serves 6

Ingredients:

  • 180g almond flour
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 2 tbsp rapeseed oil
  • 125ml water

Method:

  1. In a bowl, combine all ingredients until well incorporated and almost dough-like.
  2. Line a tin or bowl with greaseproof paper and press mixture in.
  3. Refrigerate for an hour until slightly stiffer and chilled.

And that is literally it! You can spread your 1-step almond cheese on crackers or toast or even bake for a more crumbly, feta-like texture, perfect as a pizza topping. I also stuffed it into roasted peppers and added to my tomato pasta sauce for added creaminess.
