This 1-Step Almond Cheese doesn’t need to be soaked overnight as with other nut cheeses and requires just 4 ingredients to be made. It’s creamy, delicate and versatile and super easy for anyone and everyone to make. The only step required is mixing!
- 180g almond flour
- 2 tbsp lemon juice
- 2 tbsp nutritional yeast
- 2 tbsp rapeseed oil
- 125ml water
- In a bowl, combine all ingredients until well incorporated and almost dough-like.
- Line a tin or bowl with greaseproof paper and press mixture in.
- Refrigerate for an hour until slightly stiffer and chilled.
And that is literally it! You can spread your 1-step almond cheese on crackers or toast or even bake for a more crumbly, feta-like texture, perfect as a pizza topping. I also stuffed it into roasted peppers and added to my tomato pasta sauce for added creaminess.
I have a similar cheese recipe, but made with cashews instead for a bit more of a ‘creamy cheesy’ type feel so if you fancy checking it out, here’s the link https://foodflaneur.com/2019/04/09/cranberry-and-cashew-cream-cheese-vegan-gluten-free-grain-free-no-refined-sugar/.
I’d like to give a massive thanks to Omar from Lands and Flavors for his inspiration in helping me create this recipe. You can find his version here: http://www.landsandflavors.com/basic-almond-cheese/.
