These ooey, gooey, chewy White Chocolate Blondies are sheer chunks of deliciousnes. They’re made with chickpeas you know?! I know, it’s insane. Punctured with chunks of white chocolate for that little soft crunch in each mouthful.
Made with a heck load of beans, these squidgy little slices are packed with protein and fibre along with a whole heap of other good things to keep you nice and nourished.
They are also gluten-free, flourless and require just 2 steps – one in a blender and one in the oven and voila, they’ll be ready to eat as soon as you know it.

How to make White Chocolate Blondies from scratch? To make White Chocolate Blondies you will need chickpeas, oats, oil, maple syrup, vanilla extract, baking powder, baking soda and white chocolate chips. All ingredients are added to a food processor (except chocolate chips) to create a smooth, thick batter. This is then transferred to a baking tray, the chocolate chips are sprinkled on top and the blondie tray is baked for 25 minutes until cooked.
Are Chickpea Blondies healthy? Chickpea blondies are not necessarily healthy as they could contain a significant amount of sugar and fat depending on the recipe yo follow. This recipe would be considered a healthier option than many other blondie recipes due to nutrient value provided by the chickpeas and oats and there is no refined sugar, other than that possibly from the chocolate which is optional. The fat content is also relatively low – I’d say a chunk is good enough for a healthy snack or even breakfast on the go.
Are White Chocolate Blondies nut-free? These chickpea blondies are nut-free, though be sure to double check your ingredients especially if you are allergic as some of the ingredients may have been processed in a factor where nuts are also processed.
White Chocolate Blondies Recipe
Makes 16 chunks
Ingredients for White Chocolate Blondies:
- 180g cooked chickpeas
- 200g oats
- 120 ml rapeseed oil
- 250 ml maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp bicarbonate soda
- White chocolate chips/chunks (optional)
- Preheat oven to 180℃.
- In a blender, combine all ingredients until creamy batter forms.
- Sprinkle the chocolate chips over the top.
- Transfer batter to tin lined with greaseproof paper and bake for 25-30 minutes (top should start cracking along the edges).
- Allow to cool before cutting into chunks.
